Open source projects can be fantastic learning tools for those wanting to get better at programming with a toolkit or platform. Here are a few open-source projects using ASP.NET MVC.

Oxite

In their own words, "Oxite is an open source, web standards compliant, blog engine built on ASP.NET MVC." It looks like an interesting project but after spending some time in the source code, I would not recommend it as a learning exercise for those new to MVC. Many will find that its use of other projects like Unity obscure what is ASP.NET MVC from what is something else entirely. But for those more familiar with MVC it may be worth your time.
